Yesterday we began discussing how cultural recipes can be. Julia Child, an outstanding educator, realized how cultural the French techniques were. In her seminal work, Mastering the Art of French Cooking. That is why her instructions were so detailed and so thorough. She did not assume that Americans would intuitively understand a French recipe. And she was right. When we follow the steps of her beef bourguignon recipe, the outcome is much better than it would be without those detailed instructions.
